Red rajma, also known as red kidney beans, are a popular dish in Northern India. They are a nutrient-dense legume that are high in protein, fiber, vitamins, and minerals. They are also known as rajma dal.
Red rajma are usually dark red in color and shaped like kidneys, which is how they got their name. They typically contain 24–26% protein, 12% moisture, and 6–7% fiber. When cooked by boiling, they are 67% water, 23% carbohydrates, 9% protein, and contain negligible fat. They are also a rich source of folate, iron, and phosphorus, and contain moderate amounts of thiamine, copper, magnesium, and zinc.
