      Avakaya Pachadi, also known as Andhra-style Mango Pickle, is a traditional Telugu condiment made with raw mangoes, spices, and oil. It's a staple in many Andhra Pradesh households, especially during the mango season.

Ingredients:-

mangoes (preferably sour)

 mustard oil or vegetable oil
cup mustard seeds
cup fenugreek seeds
turmeric powder
red chili powder
 salt
asafoetida (optional)
Chopped green chilies (optional)

Preparation:

1. Chop mangoes into small pieces.
2. Dry roast mustard seeds, fenugreek seeds, and asafoetida (if using).
3. Grind the roasted spices into a coarse powder.
4. Mix mango pieces, spice powder, turmeric, chili powder, and salt.
5. Heat oil and pour over the mango mixture.
6. Let it cool, then store in an airtight container.

Types:

1. Traditional Avakaya: Made with mustard oil and a strong flavor.
2. Mild Avakaya: Uses less oil and spices for a milder taste.
3. Instant Avakaya: Quick version using cooked mangoes.
