Our Home made Kakdi aur Urad dal wadis are sun dried dumplings made with Grated cucumber blended with ground urad lentil batter. They are meaty in texture as well as in taste. These dumplings are also a great substitute for meat and even the not so healthy soy chunks that we get in India. Plus they are Vegan as well as gluten free. you can add them to veggies, rice, even soups, pasta or noodles.
They can also be fried and served as a side dish. They soak up the sauce or gravy in which they are cooked and yet retain their texture, flavour & taste.
Kakdi Urad Dal Badi can also be added to various vegetable curries, meat dishes, rice pulaos etc., to give these dishes a distinctive spicy flavour. They can be soaked in water, mashed and used as stuffing for parathas, and Kachoris.
Before cooking, you need to break them gently, by wrapping them in a kitchen towel and hitting them gently with a rolling pin or meat tenderizer. Then fry the pieces for a few seconds in 1 tsp. oil. They are now ready to be added to any dish of your choice.
