Instructions | *Rinse the broken wheat thoroughly under running water until the water runs clear to remove any dirt or debris. Heat oil or ghee in a pan or pressure cooker over medium heat. Add cumin seeds to the hot oil and let them splutter for a few seconds. Add chopped onions to the pan and sauté until they turn translucent. Add chopped tomatoes to the pan and cook until they become soft and mushy. If using, add grated carrots and diced potatoes to the pan and cook for a few minutes until they start to soften. Add the rinsed broken wheat to the pan and sauté for 2-3 minutes to lightly toast the wheat grains. Pour water into the pan, add salt, turmeric powder, and red chili powder, and mix well. If using a pressure cooker, close the lid and cook for 2-3 whistles. If using a pan, cover and cook on low heat until the wheat is cooked through and water is absorbed, stirring occasionally. This might take around 15-20 minutes. Once cooked, fluff up the wheat daliya with a fork. Garnish with fresh coriander leaves and serve hot with lemon wedges on the side for extra flavor.
